I'm 70Kg, so quite comparable. I used to have a JP RWW 83 and a JP Twinser 68. This year I bought a Quatro Twinser 84. It planes a bit slower than the JP RWW, but it's much more controllable in high winds than the RWW and it's much easier maneuverable. With the volume, it brings me easier through the white water than the 68. So effectively I think the Quatro 84 will be my "single" board and it will reduce the use of my 68L to the ideal days and the days with heavy winds.
My sails: 3.5, 4.0, 4.7, 5.3 and 6.2. I had no problems using the 6.2 on my JP RWW 83, so I don't think it will cause issues using it on the Quatro 84 (though I haven't tried yet). The 4.0 works fine on the Quatro, but I haven't tried the 3.5 yet.
Conclusion: I would take a 85L quad rather than a 78L
